Cooking for Mom
Now the deal with my being allowed to stay here was that I would have to cook dinner for Mom when Dad was away. Dad is actually away at Cabots cove fairly often as he works in a different village than the one the main house is in. Now its always a challenge to cook for someone, because you end up stressing over whether they’ll like it or not. If I’m cooking for myself and its awful I can dump it in the compost and no one’s the wiser (unless they examine my compost). If I’m cooking for mom and its awful than I have to start from scratch. So far I’m doing alright - she loved the spinach and chickpea salad (its warm and tasty so hard not to), the sweet and sour salmon, the omelettes, the hamburger and cream cheese fritatta, the sweet potato fries, but today I copped out and went with Hamburger Helper (the chili macaroni one - definitely my favourite, I should know after a few years in university). I mean yes dinner was exceptionally late due to us being out and about, but still! Thankfully, she enjoyed it.
Now yesterday, I also had to cook. But for both her and Dad. That was even more stressful since he is the family cook, and we all consider him to be amazing in the kitchen. Well, I made my usual take on the 7 layer casserole, with potatoes instead of rice, and lots of cheese. I put it in the oven for over an hour at 350 degrees. You would think that this would’ve cooked it, but it still had its cold parts and the potatoes were a little hard - turns out that the oven runs 100 degrees colder than whatever setting its at! Lesson learned for next time. That said, everyone still loved it and I’m sure I’ll be making it again.
